problem scanning into .pdf

When I scan a document and want it in a .pdf file, I get the following message:

title: File Conversion
message: Select the encoding that makes your document readable.
Text encoding: choice of Windows (default)....MS-DOS...Other encoding
the default chooses Western Europe (Windows)
choose OK and this is how it reads in Word:

PART TWO
When I download a .pdf file, I get information about the above but cannot read the file in WIN 7. However, Firefox reads the file correctly.
I have the latest edition of Adobe Reader
